There is always beauty and life to be found in the harsh desert, and the prickly pear cactus is one of my favorites as it produces vibrant flowers and edible fruits even in the toughest environments.
The flowers are usually yellow, although they can also be orange, red, or pink, and attract pollinators such as bees, butterflies, and birds. After pollination, the cactus develops fruits known as prickly pears ranging in color from green to red or purple, and they have a sweet, juicy flesh that is great for jams, jellies, and beverages.
